I’m so happy to share my progress with you about making kvas here in Japan!
In Ukraine, almost nobody makes kvas at home because it’s very cheap and easy to find in supermarkets. Ironically, it’s more expensive to make it yourself than to just buy it! But here in Japan, it’s a different story, and that’s why I started experimenting on my own.

Some of you may have already tried my kvas during the two degustation events I hosted in Tokyo (thank you for coming!). But if you're new here and wondering what kvas is: the taste is somewhere between cola and beer, but it’s not alcoholic (well… most of the time 😅). It’s low in calories and full of probiotics, so it’s actually good for your health!

Making kvas is really fun, but as I think about how to share it with more people in Japan, I realized that I need to focus on a non-alcohol version. When I brew kvas the traditional way (with rye malt, yeast, and sugar), the alcohol content can sometimes go slightly over 1%, which isn’t allowed for public sales without a license.

So right now, I’m researching how to create a truly non-alcoholic version. I’ve been testing different types of yeast and even looking into getting a small brewing machine. Another challenge is that non-alcoholic kvas usually doesn’t have that natural foam or fizz, so I’ve been experimenting with adding carbonation myself... maybe a bit too much at times ðŸ¤ðŸ’¥
